Breakfast that says good morning to your body


Ingredients

 

Baked beans

  • 1 tablespoon vegetable oil

  • 1 tin baked beans

  • 1 medium onion (diced)

  • ½ red pepper (diced)

  • 2 cloves garlic (finely chopped)

  • Fresh chili (finely chopped)

  • Tabasco green jalapeno sauce


Mushrooms

 
  • 2 cups sliced mushrooms

  • 1 clove garlic (minced)

  • 1 tablespoon olive oil

  • 2 tablespoons garlic butter

  • Salt and pepper


Method

 

Baked beans

  1. Heat a medium saucepan over medium heat. Add oil, and onions, garlic, chili and fry for 3 – 4 minutes or until the onion is soft and almost lightly golden.

  2. Add red pepper and cook for further 1 minute.

  3. Add baked beans and green jalapeno sauce and simmer for 3 – 4 minutes


Sauteed mushrooms

  1. To clean mushrooms, wipe gently with a paper towel.

  2. Fry garlic in olive oil on high heat for 1 minute.

  3. Add mushrooms and butter then simmer on low - medium heat for 3 minutes or until the mushrooms start to change colour.

  4. Season with salt and pepper and continue to simmer for 2 – 3 minutes or until they are golden brown.
