Chicken feta salad with sprouts



Ingredients

 

Salad

  • 2 chicken fillets cut into strips

  • 1 1/2 tablespoons Robertsons spicy moroccan rub

  • 1 tablespoon vegetable oil

  • 1 teaspoon butter

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

  • 1 cup cherry tomatoes cut in half

  • 1/2 cucumber cut into thin strips

  • ½ red onion cut into thin strips

  • 1/2 cup feta cheese cut into small cubes

  • Sprouts to garnish


Dressing

  • 15 ml white vinegar

  • 15 ml olive oil

  • juice of 1/2 lemon

  • 1/2 teaspoon honey

  • salt and black pepper to taste


Method

 

Salad


  1. Mix chicken strips and Portuguese rub in a bowl, set aside and allow to marinade for 15 – 20 minutes.

  2. Heat a medium pan. Add butter, oil and chicken and sauté for 5 – 10 minutes or until chicken is golden brown and cooked through.

  3. Remove from heat for the chicken to cool down to room temperature.

  4. In a salad bowl, mix the tomatoes, cucumber, onion and chicken.

  5. Top with feta cheese and sprouts and serve.


Dressing


In a small bowl, mix white vinegar, olive oil, lemon juice, salt and pepper. Adjust to your desired taste.
