
Ingredients
Salad
2 chicken fillets cut into strips
1 1/2 tablespoons Robertsons spicy moroccan rub
1 tablespoon vegetable oil
1 teaspoon butter
½ teaspoon salt
½ teaspoon ground black pepper
1 cup cherry tomatoes cut in half
1/2 cucumber cut into thin strips
½ red onion cut into thin strips
1/2 cup feta cheese cut into small cubes
Sprouts to garnish
Dressing
15 ml white vinegar
15 ml olive oil
juice of 1/2 lemon
1/2 teaspoon honey
salt and black pepper to taste
Method
Salad
Mix chicken strips and Portuguese rub in a bowl, set aside and allow to marinade for 15 – 20 minutes.
Heat a medium pan. Add butter, oil and chicken and sauté for 5 – 10 minutes or until chicken is golden brown and cooked through.
Remove from heat for the chicken to cool down to room temperature.
In a salad bowl, mix the tomatoes, cucumber, onion and chicken.
Top with feta cheese and sprouts and serve.
Dressing
In a small bowl, mix white vinegar, olive oil, lemon juice, salt and pepper. Adjust to your desired taste.
