Rosemary and garlic golden potatoes


Ingredients

 
  • 10 - 15 baby potatoes

  • 3 cloves garlic, finely chopped

  • 2 tablespoons olive oil

  • 3/4 tablespoon fresh rosemary sprigs

  • Coarse salt and freshly  ground black pepper, to taste


Method

 
  1. Preheat oven to 200 °C

  2. Lightly oil a baking sheet or coat with nonstick spray.

  3. In a large pot of salted boiling water, cook potatoes for 15 - 20 minutes or until they're tender,

  4. drain well and place potatoes onto the prepared baking sheet.

  5. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece.

  6. Top with olive oil, garlic, ground black pepper and rosemary.

  7. Place into oven and bake for 18-20 minutes, or until golden brown and crisp.

  8. Serve immediately.
