
Ingredients
1 cup dried mopane worms
2 cups boiling water
1 tbs cooking oil
1 slice of garlic butter
1 medium onion, chopped
1 medium tomato, chopped
1/2 cup roasted red pepper sauce (click here for my recipe)
3/4 teaspoon sugar and a pinch of salt to season.
Method
Soak mopane worms in hot water for approximately 3 hours. Drain and set aside.
In a frying pan, heat cooking oil and sauté the onion until soft and caramelised.
Add chopped tomato and cook for 5 to 7 minutes, stirring occasionally.
Add the roasted red pepper sauce, mopane worms, garlic butter, sugar and salt.
Stir to mix then cover with a lid and cook for 10 - 15 more minutes.

I enjoy these, served immediately with soft pap and spinach.
